I realize it would have been better to take the picture before we ate most of it, but there were hungry mouths to feed!
Here's the recipe:
3 eggs beaten
2 cups milk
1 tbsp cinnamon
a few dashes salt
5 cups rolled oats
2/3 cup vegetable or canola oil
1 cup brown sugar
1 tbsp vanilla
4 tsp baking powder
Mix all ingredients. Add one can apple pie filling (chop up the apples into bite-sized pieces). Pour into greased 9x13" pan. Bake at 350 for around 30 minutes or until golden brown. Sometimes needs to set up for 10 or so minutes after baking.
This would also be a really good dessert with a scoop of vanilla ice cream and some caramel sauce....mmmm.....glad we have some leftovers...

ReplyDeleteThis sounds fabulous! We too love breakfast dinner--so much so that dh and I had breakfast for our wedding reception, rather than dinner(I like brinner, btw, I think I will steal that lol) and this is a great alternative to the same ol' eggs and pancakes!

Sounds delicious! How awesome -- serve it for dinner, have a second helping & top it with cool whip (we never have ice cream around here) for dessert! You don't even need to change dishes! Okay, just being a bit silly on that one. Will be trying this.

I made this tonight with some minor changes. I halved the oil and sugar (I'll try substituting applesauce for the oil next time like someone suggested) and used sugar free apple pie filling. I also only ended up using about a cup of the oat mixture topped over the pie filling. The flavor was great and it was crazy healthy for dessert. Love it!!!
