What is Cinco de Mayo?

I really like to celebrate pretty much any holiday.....Cinco de Mayo included ~ simply by having a little fiesta with mexican food.  But what is Cinco de Mayo - besides the literally translated Fifth of May?  (and also besides one of my college besties, Althea's birthday!)  Contrary to what I assumed, (sorry if this shows my total ignorance) it is NOT Mexican Independence Day!  In fact, it is not even celebrated much in Mexico!
According to the always trustworthy (*wink*) Wikipedia, Cinco de Mayo is a holiday commemorating the Mexican army's unlikely victory over France at the Battle of Puebla in 1862.  The first people to celebrate it were actually Mexicans and Latinos living in California in a show of support for freedom and democracy during our Civil War.
Now that I know all the facts, what will we do?  Probably the usual - a yummy feast of delicious Mexican food!  I just made the Pioneer Woman's enchiladas a few weeks ago but I could definitely eat those again already......delish!  Or maybe I'll be a little more adventurous and try her brother's tacos....

I want to eat these NOW!

Good gracious, what is up with all of these delicious food posts this morning?! I just ate 2 hours ago and now I am starving haha. You're making me rething my lax attitude about the upcoming holiday. What a great excuse for yummy Mexican food!

I made these!! They were really good...just a lot of work! I was doing the frying and Maddie was doing the filling! Other than the work and the mess....super yummy!

I will celebrate any day that includes Mexican food, it's my fave! lol I have had my eye on those tacos too, yum!!

Your right Cinco de Mayo is not celebrated here. It was a small battle that was won but just that battle. I've even heard a rumor that Taco bell started the celebrating of that date since there were no other holidays to promote that month! The date that is celebrated and kind of fun is April 30th and that is National kid's day here in Mexico...often celebrated with a pinata.

Hi Angie!!! Nope, we do not have any Cinco de Mayo traditions but let me tell ya that food looks soooo good!! I have been trying to lose weight and I want to eat everything I see. Why does it have to be so hard. lol

Those look so yummy! Tacos really are the best food, super easy to make but you can do so much variety with them. And they're ALWAYS delicious! ;]
